Organized by the Specialty Food Association, this year’s event was themed “Discover, Connect, and Create Opportunities,” marking the global specialty food industry’s most significant annual trade gathering.

Exhibition Space and Exhibitor Numbers Reach New Heights. This year’s show spanned 340,000 square feet, with the Riverside Pavilion making its return for the first time. The exhibition brought together 2,492 participating companies from 59 countries across six continents, representing substantial year-over-year growth. Among them, 378 were first-time exhibitors, and 90 were start-ups or incubator‑backed brands. Exhibitors covered the full spectrum of categories, including baked goods and confectionery, beverages and dairy products, seasonings, convenience foods, natural and organic products, and plant‑based offerings. The event attracted more than 32,000 industry professionals—up 14% compared to 2024—and certified buyers numbered 8,100, a 9% increase over the previous year. Retailers accounted for 38% of the buyer base, while distributors and importers made up 43%, and foodservice providers represented 19%. International buyers hailed from major markets worldwide, with Italy serving as a partner country, and Estonia and Pakistan participating for the first time.

Exhibitor Profile Shows Concentration at the Top End Amidst Diversification. Global food giants such as Lactalis Group, FrieslandCampina, and Rovagnati were all present, while prominent North American brands like Manischewitz, Norseland Inc., and Lioni Latticini showcased their latest innovations. Start-up brands emerged as highlights of this year’s show, with West Indies Peppa Sauce, Yax Snacks, Ancestral Organics, and Oulala Manba Peanut Butter presenting products rooted in cultural heritage and innovative formulations. Chinese exhibitor Zhejiang Baixing Foods introduced an organic mushroom line along with “three‑no” value-added sauces, whose commitment to “no chemical flavorings, no preservatives, and no MSG” earned high praise from international buyers. The show also featured 24 international pavilions, including those representing Italy, Spain, France, Japan, and South Korea.

A Rich Array of New Products, with Nearly 1,000 Debuting for the First Time. A total of 983 new products were unveiled at this year’s show, a 90% increase over 2024. The Debut District area concentrated first-time exhibitors, new product launches, and emerging brands, with 185 booths serving as key hubs where buyers discovered cutting-edge offerings. The Maker Prep Pavilion made its debut, showcasing brands founded by graduates of Maker Prep courses. Product categories included gluten‑free foods, plant‑based alternatives, spicy‑sweet beverages, and high‑protein snacks. Notably, Dubai Chocolate became a social media sensation, drawing numerous content creators eager to check in. Additionally, a Supplier Diversity Zone highlighted minority‑owned brands such as Aaji’s, JOI, KULA Foods, and Peepal People.

First-Ever North American Pastry Championship Finals Held. For the first time, the show hosted the finals of the North American Pastry Championship, organized by the French Culinary Academy and judged by renowned chef Dominique Ansel. Over two days, three competing teams tackled the challenge of crafting a cake and 18 matching accessories within a three-and-a-half-hour timeframe, culminating in a “masterpiece” showdown.

Educational Sessions and Keynote Addresses Abound. More than 30 educational sessions were held throughout the event, addressing pressing topics such as tariff policies, supply chain management, retail readiness, financing strategies, and trends in foodservice. Vibrant Social Events and Industry Networking. The show featured a range of networking opportunities, including buyer welcome receptions, new member parties, and the SFA Awards Ceremony hosted by Jeni Britton. The 5 Boro Block Party opened its doors to all attendees, fostering a lively community atmosphere.
